This is my go to summer crumble. I make it all the time and it is one of the quickest dessert recipes to make. I found this recipe from Gwyneth Paltrow’s Cookbook called My Father’s Daughter.


4 cups of fruit – fresh or frozen ( I use  a mixed berry bag)

1/4 cup spelt light flour plus 1 tbsp to mix with fruit

1 cup of whole oats

1/4 cup brown sugar

1/4 tsp cinnamon

pinch of sea salt

4 tbsp organic unsalted butter at room temperature


Pre-heat oven to 350 degrees. Spray a round pie shaped pan. Mix fruit with 1 tbsp white spelt flour and place into pie pan. In a separate bowl using your hands mix spelt light flour, whole oats, brown sugar, cinnamon, sea salt and organic butter. Make sure the butter is mixed into the other ingredients to create a crumble. Sprinkle mixture on top of fruit. Bake for 45-50 minutes. Let cool and enjoy! Top with sorbet or ice cream.




This simple cookie dough recipe can be made in 5 minutes and can be filled with both sweet and savoury ingredients. I chose to fill mine with Nutella and Prune Spread. Thanks mom for the recipe!!


2 1/2 cups self rising dough or unbleached flour with 1 tsp baking powder

1/4 cup sour cream

3/4 cup organic butter

Preheat oven to 350 degrees. Cut a piece of parchment paper and place on a large cookie sheet. In a cuisinart add flour, sour cream and organic butter. Mix until the dough forms into a ball. Take out and split the dough in half. Form the dough into two balls and cover with plastic wrap and place in the fridge for 2- 3 hours or overnight. Take out one piece of the dough at a time from the fridge and let it sit on the counter until you can roll it out. Sprinkle some flour on the counter , so the dough doesn’t stick. Start rolling out the dough until it forms either a circle or rectangle shape. Both shapes work fine. Fill with your favourite filling. I chose Nutella and Date Spread. You can also choose any jams with raisins, prune spread with nuts, feta cheese with spinach or shredded cheddar cheese. Now roll the dough as tight as you can into a log shape. Place on baking sheet with parchment paper and bake for 25 minutes or until  a light golden colour. Take out of oven and let it rest for 1 minute and then slice it into even 1/2″ inch wide. Transfer cookies onto cooling rack with the parchment paper so it doesn’t crumble. Let cool for 5 minutes. Enjoy!





Although my family is not vegan, I decided to do a vegan muffin recipe again this week because I was running low on eggs. My substitute for eggs was ground flax seeds mixed with water.


1 cup whole wheat flour

1/2 cup spelt light flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp sea salt

1/2 cup cane sugar or agave nectar

1/3 cup vegetable oil, coconut oil melted or organic butter

1/4 cup unsweetened apple sauce

1 tbsp ground flax seeds with 3 tbsp water

3 mashed ripe bananas

1/2 -3/4 cup semi sweet chocolate chips


Pre-heat oven to 350 degrees. Line and spray a 12 cup muffin tray or use silicone liners. In a large bowl mix flours, baking powder, baking soda and sea salt. Mash bananas with a fork and set aside. In a separate bowl mix sugar, oil, apple sauce and flax seed mixture. Add mashed bananas and mix once again. Add dry mixture to the batter and stir only until combined. Gently fold chocolate chips into the batter and scoop into muffin cups. Bake for 25 minutes or until firm to the touch. Enjoy!

Summer Baking Fun. My younger daughter and her friend decided to bake some cookies from scratch. They found a simple recipe which turned out delicious. Lots of chocolate chips and chewy texture. Very proud of her baking skills.


1 1/2 whole wheat flour

1/2 tsp baking soda

8 tbsp organic salted butter

1/2 cup cane sugar

1/4 cup brown sugar

1 tsp pure vanilla extract

1 cup semi sweet chocolate chips


Pre-heat oven to 350 degrees. Line tray with parchment paper or use a silicone cookie mat.

In a small bowl microwave butter for 20 seconds. In a separate bowl mix butter and sugars together until creamy. Add egg and vanilla and mix until blended together. In the same bowl add flour and baking soda. Mix until the batter turns into a ball. Take batter out of bowl and add chocolate chips. Use a teaspoon to form small balls. Place on cookie sheet and bake for 10 – 12 minutes. Let cool for a few minutes and then transfer to a cooling rack. Enjoy!
