This week I decided to make a loaf instead of muffins. I’m always trying to see which way it tastes fresher the next day.

INGREDIENTS

1 cup whole wheat flour

1 cup spelt light flour

1/4 cup ground flax seeds

1/4 tsp sea salt

1 tsp baking soda

1/2 cup safflower oil

3/4 cup pure maple syrup

2 large organic eggs

1/4 cup greek yogurt

3 large bananas – mashed

1 cups semi sweet chocolate chips

DIRECTIONS

Preheat oven to 350 degrees. Line with parchment paper a 9 x 5″ loaf pan. In a bowl mix both flours, ground flax seeds, sea salt and baking soda. In a separate bowl beat safflower oil, maple syrup, eggs and greek yogurt. Add in mashed bananas. Mix in dry ingredients into wet mixture then stir in chocolate chips. Pour batter into loaf pan and bake for 1 hour. Let cool for 10 minutes. Enjoy!

This delicious healthy cookie recipe is from Cookies and Cups. The recipe is so easy to make and has very little oil.

INGREDIENTS

3 ripe bananas – mashed

1/3 cup oil – safflower or coconut oil – melted

2 cups whole oats

1 tsp pure vanilla extract

1/2 tsp sea salt

1 cup of raisins, cranberries or dried blueberries

1/2 cup shredded unsweetened oats

1/2 cup semi sweet chocolate chips

DIRECTIONS

Pre-heat oven to 350 degrees. Line a large cookie sheet with parchment paper. In a large bowl mix all the  ingredients together. Take a tablespoon to measure out the cookies on the tray. Place tray in oven and bake for 20 minutes. Let cool for 5 minutes.

This recipe has very few ingredients, which is always good when you haven’t had time to hit the grocery store.

INGREDIENTS

1 cup whole wheat flour

1/2 cup spelt light flour

2 tbsp ground flax seeds

1 tsp baking powder

1 tsp baking soda

1/2 tsp sea salt

1/2 cup cane sugar

1 large organic egg – beat separately

1/3 cup oil – safflower, coconut

2 – 3  large bananas mashed

bananas to garnish

DIRECTIONS

Pre-heat oven to 350 degrees. Spray a 12 cup muffin tray or use silicone liners. In a bowl mix flours, ground flax seeds, baking powder, baking soda and sea salt. In a separate bowl blend mashed bananas, cane sugar, and egg. Add oil. Mix dry ingredients into wet ingredients. Scoop into muffin cups and garnish with sliced bananas. Bake for 20-25 minutes. Let cool for a few minutes and transfer to a wire rack. Cool for 10 more minutes. Enjoy!

Lately my family has been on a big avocado kick. We put them in our smoothies, eat them on multigrain toast, on burgers, etc. I found this recipe from yummly, but I altered some of the ingredients.

INGREDIENTS

1 cup whole wheat flour

1 cup spelt light flour

1 tsp sea salt

1 tsp baking soda

1/2 cup cane sugar

3 ripe bananas mashed

1/2 avocado mashed

2 organic eggs

1/4 cup water

14 cup flax seed ground

DIRECTIONS

Preheat oven to 350 degrees. Line and spray a 12 cup muffin  tray or use silicone muffin cups. In a bowl mix flours, sea salt, baking soda and cane sugar. In a separate bowl mix mashed bananas, mashed avocado, eggs, water and ground flax seeds. Mix dry ingredients into wet ingredients. Scoop batter into muffin cups and garnish with a slice of banana. Bake for 25-30 minutes.Remove from oven and let sit for 5 minutes. Transfer to a cooling rack for another 10 minutes. Enjoy!

Always trying new recipes to make the perfect muffin!

INGREDIENTS

1 cup whole wheat flour

1/2 cup spelt light flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp sea salt

1 tbsp chia seeds

2-3 mashed ripe bananas

1/3 cup milk –  unsweetened almond milk, soy, rice

1/2 cup cane sugar

1/3 cup oil – safflower, coconut – melted

1 tsp pure vanilla extract

1/2 cup chocolate chips

DIRECTIONS

Pre-heat oven to 350 degrees. Line and spray a 12 cup muffin tray or use the silicone liners. In a bowl stir flours, baking powder, baking soda, sea salt and chia seeds together. In a separate bowl place mashed bananas, milk, sugar, oil and vanilla. Mix until combined and then add dry ingredients. Blend altogether and add chocolate chips to the mixture. Scoop batter into muffin cups and top with a slice of banana. Bake for 20-25 minutes. Remove muffin tray from oven and then let stand for 5 minutes. Transfer to cooling rack for another 10 minutes. Enjoy!

 

 

 

My muffin of the week uses oat flour. If you don’t have oat flour you can blend oats in a small cuisinart or blender to make flour. These muffins turned out moist and have very little fat. I like to toast them a bit the next day and add some jam inside.

1/2 tsp baking soda

1/4 tsp sea salt

2 bananas mashed

1/4 cup unsweetened apple sauce

1 organic large egg

1 tsp vanilla

3/4 cup cane sugar

1/2 tsp cinnamon

1 banana for slicing on top of muffin

DIRECTIONS

Pre-heat oven to 350 degrees. Line and spray 12 cup muffin tray or use the silicone muffin cups. In a bowl mix bananas, unsweetened apple sauce, egg and vanilla. Once wet ingredients are mixed properly add oat flour, chia seeds, baking powder, baking soda, sea salt, cane sugar and cinnamon. Mix until combined. Scoop into muffin cups and then add sliced banana on top. Bake for 25 minutes or until firm to touch. Let cool for 5 minutes and then transfer to a cooling rack for another 5 minutes. Enjoy!

Smoothie bowls are extremely popular lately. Eating healthy and taking care of your body has become more the norm in today’s fast paced society. Recently my family and I visited several smoothie and juice bars. We tried various smoothie bowls and some interesting drinks. The main ingredient in smoothie bowls is the acai berry. This berry is very high in antioxidants and also contains healthy fatty acids. We decided to go on a hunt to see if we could find the acai berry. We managed to find them in the frozen section at a few health food stores, although we have yet to find them at any of the main grocery stores.  We bought the acai berries twice which has 4 servings in each package but have also used mixed frozen berries to make the same smoothie bowls. They are great for breakfast, lunch or even as a snack. You can add whatever toppings you desire. I made a simple granola to add on top but you can also purchase a ready made one.

INGREDIENTS

acai berry – 1 package

1 banana

Toppings

granola

blueberries

apples

unsweetened coconut flakes

sunflower seed butter

agave – drizzle if you would like extra sweetness

DIRECTIONS

In a small blender mix frozen acai berry package and 1 banana together until smooth. Take out of blender and scoop into a bowl. Start to place all the yummy toppings. Take your time so it looks as good as it tastes. Enjoy!

This is a quick and easy breakfast to prep the night before. Oatmeal in a jar. You can warm it up in the morning or eat it cold. Both ways taste great! My older daughter found this recipe from Kimberly Gordon’s blog called ilovewildfox.com. She’s just a little obsessed with the line!!

INGREDIENTS

2 cups rolled oats

1 1/2 cups milk of choice – organic, almond, rice

1/2 cup greek yogurt

1 banana mashed or sliced

1- 2 tbsp unsweetened cocoa

2 tbsp pure maple syrup or honey

DIRECTIONS

Mix all ingredients together in a bowl and then transfer to a mason jar. Place in the fridge overnight before eating. You can add any toppings to it like fresh berries or have it plain. Enjoy!

I found this recipe on a great site that i haven’t been on in a while, called Two Peas and their Pod. No eggs in this recipe which was perfect for me because I’m running low on eggs at the moment.

iNGREDIENTS

1 cup whole wheat flour

1 cup spelt light flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp sea salt

1/4 tsp ground cinnamon

1 3/4 mashed bananas

3/4 cup brown sugar

1/4 cup organic coconut oil melted and cooled

1/2 cup unsweetened almond vanilla milk, soy, organic milk

2 tsp pure vanilla extract

1 cup fresh or frozen blueberries

Turbinado sugar for sprinkling the top

DIRECTIONS

Pre-heat oven to 350 degrees. Line and spray a 12- cup muffin tray. in a bowl mix flours, baking powder, baking soda, sea salt and cinnamon. On a plate mash bananas and place into large bowl with sugar, milk, coconut oil and vanilla. Beat until mixed well. Add flour mixture to banana mixture. Mix only until blended. Place blueberries into batter and fold with a wooden spoon. Scoop batter into muffin cups and sprinkle turbinado sugar on top. Let cool and transfer to a cooling rack. Enjoy!

This muffin recipe uses rolled oats instead of flour blended to a fine texture. You would never know there is no flour in this recipe. Delicious!!

INGREDIENTS 

2 cups of rolled oats blended finely

1/4 cup brown sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1 cup Greek yogurt

2 large organic eggs

2 ripe bananas mashed

3/4 cup semi-sweet chocolate chips

DIRECTIONS

Pre-heat oven to 375 degrees. Spray a 12 cup muffin tray. Blend rolled oats until fine texture. Add brown sugar, baking powder, baking soda, Greek yogurt, eggs and mashed bananas. Blend until smooth. Stir in chocolate chips. Scoop into muffin cups and bake for 18-20 minutes. Let stand and then transfer to cooling rack for 5-10 minutes. Enjoy!
