Since I have an addiction to green tea lattes, I decided to make Green Tea Matcha Muffins this week.


1 cup whole wheat flour

1 cup spelt light flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp sea salt

1/4 cup cane sugar

3 tsp matcha green tea powder

1/4 cup unsalted organic butter – melted

1 cup milk – organic, unsweetened almond milk

1/4 cup agave nectar

1 large organic egg – beaten

1 cup of chocolate chips – white or dark


Pre-heat oven to 350 degrees. Line and spray a 12 cup muffin tray or use silicone liners.

In a bowl mix flours, baking powder, baking soda, sea salt, cane sugar and matcha green tea powder. In another bowl blend melted butter, milk, agave nectar and egg. Mix dry ingredients into wet ingredients. Add chocolate chips. Scoop batter into muffin cups and bake for 20 – 25 minutes. Remove tray from oven  and let cool. Transfer to cooling rack for 10 minutes.Enjoy!
