I found this recipe on a great site that i haven’t been on in a while, called Two Peas and their Pod. No eggs in this recipe which was perfect for me because I’m running low on eggs at the moment.

iNGREDIENTS

1 cup whole wheat flour

1 cup spelt light flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp sea salt

1/4 tsp ground cinnamon

1 3/4 mashed bananas

3/4 cup brown sugar

1/4 cup organic coconut oil melted and cooled

1/2 cup unsweetened almond vanilla milk, soy, organic milk

2 tsp pure vanilla extract

1 cup fresh or frozen blueberries

Turbinado sugar for sprinkling the top

DIRECTIONS

Pre-heat oven to 350 degrees. Line and spray a 12- cup muffin tray. in a bowl mix flours, baking powder, baking soda, sea salt and cinnamon. On a plate mash bananas and place into large bowl with sugar, milk, coconut oil and vanilla. Beat until mixed well. Add flour mixture to banana mixture. Mix only until blended. Place blueberries into batter and fold with a wooden spoon. Scoop batter into muffin cups and sprinkle turbinado sugar on top. Let cool and transfer to a cooling rack. Enjoy!
