Chia Seeds is a great source of fibre and omega 3 fatty acids.

Today i decided to add them to my muffin recipe. The muffins turned out moist and delicious.

INGREDIENTS

1 cup whole wheat flour

1 cup instant rolled oats

1 tsp baking powder

1 tsp baking soda

1/8 tsp sea salt

1/4 cup coconut oil

1/2 cup brown sugar

1 large organic egg

3/4 cup greek yogurt

1/4 cup milk

1/2 tsp pure vanilla extract

2 bananas, mashed

DIRECTIONS

Pre-heat oven to 350 degrees. Line and spray muffin tray. In a bowl combine mashed bananas and chia seeds and set aside. in another bowl mix coconut oil and brown sugar. Beat in egg and then add greek yogurt, milk and vanilla. Add flour, oats, baking powder, baking soda and sea salt. Mix until combined. Now add banana chia seed mix and stir in with a wooden spoon. Scoop batter into muffin tray and bake for 25-30 minutes. Let stand for 5 minutes and then remove onto cooling rack. Enjoy!
