My muffin of the week is low in sugar thanks to adding more bananas. Hope you will enjoy this recipe.

INGREDIENTS

1 1/2 cup whole wheat flour

1/2 cup spelt light flour

1/4 cup cane sugar

2 tsp baking powder

1 tsp baking soda

Pinch salt

1 cup semi sweet chocolate chips

2 cups ripe bananas – mashed

1/2 cup oil

1/4 cup cup milk of choice 

2 organic eggs 

DIRECTIONS

Pre-heat oven to 350 degrees. Spray and line a 12 cup muffin tray. In a bowl mix flours, sugar, baking powder, baking soda and salt. Add chocolate chips and coat with flour. In a separate bowl whisk eggs, mashed bananas, oil and milk. Add wet ingredients into dry ingredients. Take a wooden spoon and mix until blended. Scoop batter into muffin cups. Bake for 25-30 minutes. Take out of oven and cool for 5 minutes and then transfer onto cooling rack. Enjoy!
