i love putting fruit in my muffins. These are definitely like having dessert in a muffin. They turned out delicious! 


1/2 cup unsalted butter or vegan margarine 

3/4 cup brown sugar

2 large eggs

2 cups whole wheat flour 

1/4 tsp baking soda

1/2 tsp baking powder

1/2 tsp sea salt

1 tsp cinnamon 

1 cup Greek yogurt

2 cups apples, chopped into small pieces

Muffin Topping

1/2 cup spelt flour

1/2 cup brown sugar

1/2 tsp cinnamon

4 tbsp unsalted butter, room temperature


Preheat oven to 350 degrees. Spray 12 cup muffin tin. In a bowl using a hand blender mix brown sugar and butter. Add eggs and mix well. In a separate bowl mix flour, baking soda, baking powder, salt and cinnamon. Stir in half the flour to wet mixture and blend well. Add 1/2 of the Greek yogurt and remaining flour. Add the rest of the Greek yogurt. Mix until combined. Pour the cubed apples into bowl and stil until combined. Scoop into muffin tin. In another bowl combine the toppings, flour, brown sugar, cinnamon and room temperature butter. Use your hands to combine ingredients . Place topping on muffins and bake for 25 minutes. Place on cooling rack for 10 minutes. Enjoy!
