I love peanut butter and jelly, so what could be better then a PB and J Muffin. You could use what ever jam you like in the muffins. I used strawberry jam sweetened with natural juice instead of sugar.


1 large banana mashed

3 tbsp natural peanut butter

1 large egg

1/2 cup milk – soy, skim, almond, rice

2 tbsp vegetable oil

1 tsp vanilla

3/4 cup cane sugar

1 1/4 whole wheat flour

1/2 cup bran flakes or corn flakes

1 1/2 tsp baking power

1/2 tsp baking soda

3 tbsp jam – strawberry, raspberry


Pre-heat oven to 350 degrees. Spray a 12 cup muffin tray. In a large bowl mix mashed bananas, peanut butter, egg, milk, oil, vanilla and sugar. In a separate bowl stir flour, cereal, baking powder and baking soda. Mix flour mixture into banana mixture. Scoop mixture into muffin tin. Add a 1/2 tsp jam to each muffin cup. Bake for 18 – 20 minutes. Let stand for 5 minutes to cool off and transfer to a cooling rack. Enjoy!
