This weeks muffins is inspired by Martha Stewart. I did change a few of the ingredients in this recipe.

INGREDIENTS

1 cup whole wheat flour
3/4 cup spelt light flour
1/4 cup ground flaxseeds
1 tsp baking soda
1/2 tsp sea salt
1/2 cup oil
1/3 cup cane sugar
1/3 cup brown sugar
2 large eggs
2 ripe bananas
1/3 cup milk
1 tsp pure vanilla
1 cup frozen blueberries

DIRECTIONS

Pre-heat oven to 350 degrees. Line and spray a 12 cup muffin tray. In a bowl mix both flours, ground flaxseeds, baking soda, and salt. In a separate bowl beat oil and sugar together. Beat in eggs one at a time. In a third bowl mash bananas and then add milk and vanilla. Using a hand mixer add flour mixture and banana mixture to oil mixture, alternating between both mixes and ending with flour mixture. Fold in blueberries into the batter. Scoop batter into muffin cups. Bake for 25-30 minutes. Let cool on rack for 10 minutes. Enjoy!

My muffin of the week Is a Quinoa Blueberry Muffin. I’ve never baked muffins with quinoa. They actually turned out very moist. You can add any type of fruit, fresh or dried like cranberries, apricots or raspberries.

INGREDIENTS

3 tbsp oil
1 egg
1/3 cup any type of milk almond, rice
1 zest of lemon
1 tsp vanilla
1 3/4 whole wheat flour
2/3 cup cane sugar
1 1/2 tsp baking powder
1 tsp sea salt
1 cup cooked quinoa
1/3 cup blueberries

DIRECTIONS

Pre-heat oven to 350 degrees. Spray a 12 cup muffin tray. In a bowl mix oil, egg, milk, lemon zest and vanilla. In a separate bowl mix flour, sugar, baking powder and sea salt. Stir wet ingredients into dry ingredients. Then fold quinoa into batter. Add blueberries into batter. Bake for 25-30 minutes. Enjoy!

Muffins make me happy, especially chocolate muffins. These muffins get their sweetness mainly from bananas with little sugar needed.

INGREDIENTS
1/2 cup oil
1/4 cup cane sugar
2 bananas mashed
2 tbsp unsweetened Apple sauce
1 tsp vanilla
1/4 cup water
2 eggs
1 1/2 whole wheat flour
1/4 cup cocoa
1/3 cup ground flaxseed
1 1/2 tsp baking soda
1/2 tsp salt
1/2 cup semi sweet chocolate chips

DIRECTIONS
Pre-heat oven to 350 degrees. Line and spray muffin tray. In a bowl mix sugar and oil together. Add mashed bananas, apple sauce, vanilla, water and eggs. Mix until blended. In a separate bowl mix flour, cocoa, flaxseed, baking soda, salt. Add wet ingredients to dry ingredients. Add chocolate chips and scoop into muffin cups. Bake for 15 minutes. Let cool for 5 minutes. Enjoy!
