I found this recipe a long time ago for meatloaf baked in muffin tins. I only tried it once and forgot how delicious they turned out.
I used ground chicken instead of beef but I’m sure it would be just as good with beef. Recipe from The Dean Bros. Take it Easy cookbook.
1 1/2 lbs. ground beef or chicken
1 cup of plain unseasoned bread crumbs or whole wheat bread crumbs
3 eggs lightly beaten
3 tbsp. milk (I didn’t add this)
1 clove garlic finely chopped
1 medium onion finely chopped
1 1/4 tsp. salt or sea salt
1 tsp. minced fresh thyme or dried thyme
3/4 tsp. freshly ground pepper
3 tbsp. ketchup
2 tbsp. Dijon mustard
1 tsp. Worcestershire sauce or soy sauce

Preheat oven to 350F. Lightly grease a tray of muffin tins.
In a large bowl mix meat, bread crumbs, eggs, milk, garlic, onion, salt, thyme and pepper.
Divide the mixture into the muffin tins. Place muffin tray on baking sheet and bake for 20-25 minutes.
While the meat loaves are baking, whisk ketchup, mustard and worcestershire sauce. When the meat loaves are finished baking remove and brush the sauce onto each loaf. Return back to oven and bake for another 10 minutes. Remove from oven and let them sit for a few minutes. Enjoy !
