This past weekend my family and I went apple picking. The weather was spectacular and the apples were delicious.
I posted two recipes with apples that I hope you will enjoy. I also plan to make apple sauce and apple chips this week. I’ll post pictures when I’m done .

Apple Crisp
INGREDIENTS
Topping
1 1/4 cup quick cooking rolled oats
1/4 cup unbleached all-purpose flour, or whole wheat flour, or spelt flour
1/4 cup brown sugar
1/3 cup unsalted butter, softened
Filling
1/2 cup brown sugar
1/2 tsp ground cinnamon
8 – 10 apples peeled and sliced
1 tbsp lemon juice

DIRECTIONS
Preheat oven to 350F placing rack in a low position.
In a small bowl combine oats, flour, and brown sugar. Add butter and stir until combined. Set aside.
In another bowl combine brown sugar and cinnamon. Add the apples and lemon juice and stir until combined.
Spoon into baking dish. Cover with topping. Bake for about 50 minutes Let cool off for 5 minutes before serving.

Apple Muffins
INGREDIENTS
2 Apples peeled and chopped into small squares
1 cup sugar
2 cups whole wheat flour
2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 eggs
1 cup buttermilk
1/2 cup canola oil
DIRECTIONS
Preheat oven to 400F. Spray 12 cup muffin tray. Slice apples into quarters. Then dice apples into small squares. Take one of the quarters and slice 12 pieces to garnish. In a small bowl whisk sugar, flour, baking soda, salt and cinnamon. Add in apples. In another bowl whisk eggs, buttermilk and oil. Gently fold buttermilk mixture into flour mixture. Divide batter into muffin tin and top off with a slice of apple.
Bake for 16-18 minutes. Let muffins rest on cooling rack for 5 minutes before serving. Muffin recipe from marthastewart.com
