One-Bowl Chocolate Cupcakes

No need to spend time in the kitchen baking in the summer months when you have a quick and simple recipe with little to clean up. This is the perfect scenario!

3/4 cup unsweetened cocoa powder
1 1/2 unbleached all purpose flour or spelt flour
1 1/2 cane sugar
3/4 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
2 eggs
3/4 cup warm water
3/4 cup buttermilk
3 tbsp. safflower oil
1 tsp. pure vanilla extract

Pre-heat oven to 350 degrees. Line muffin sheet and set aside. Sift in a large bowl cocoa powder, flour, sugar, baking powder, baking soda and salt. Add eggs, warm water, buttermilk, oil, and vanilla. Mix until smooth. Divide batter into muffin cups 2/3 full. Bake for 20 minutes or until firm to the touch. Transfer to cooling rack. You can make a simple icing with 2 cups of icing sugar, a tbsp. of milk, and 1 tbsp. of butter.
