Buttermilk Pancakes

Breakfast is one of my favourite meals to make and eat.
My family knows that when you make things from scratch you know what ingredients go into it. This pancake recipe is from a very well known Cookbook Author Norene Gilletz. I always add fresh or frozen fruits to my pancakes depending on what’s in season. Make double the batter and freeze in baggies.

INGEDIENTS
1 1/4 CUP FLOUR, WHOLEWHEAT, SPELT
1 TBSP. CANE SUGAR
1/2 TSP. SALT
1 TSP. BAKING POWDER
1/2 TSP. BAKING SODA
1 1/4 CUP BUTTERMILK OR SOUR MILK
2 TBSP. OIL OR MELTED BUTTER
1 EGG

DIRECTIONS
Combine flour, sugar, salt, baking powder and baking soda in a bowl. Mix for 5 seconds. Add remaining wet ingredients and mix for another 10 seconds or until smooth. Do not over mix. Add fresh fruit, chocolate chips, etc into pancake mix. Heat skillet and place 1/3 cup of batter for every pancake. Cook until pancake bubbles and then flip to other side. Cook for another minute or until golden.
