Blueberry Cobbler

We can finally say spring is here and what better way to celebrate the nicer weather then with a piece of blueberry cobbler. This is a delicious recipe my friend gave to me which always seems to turn out perfect each time I make it.

3 cups fresh or frozen small blueberries
3 tbsp. cane sugar
1/3 cup orange juice
2/3 cup unbleached all-purpose flour or spelt flour
1/4 tsp. baking powder
1 pinch sea salt
1/2 cup butter, softened/unsalted
1/2 cup cane sugar
1 egg
1/2 tsp. pure vanilla extract

1. Preheat oven to 350F.
2. Prepare an 8′ square baking dish.
3. In a small bowl mix blueberries, 3 tbsp. sugar, and
orange juice and pour into baking dish.
4. In another bowl mix flour, baking powder, and salt.
5. In a mixing bowl cream butter and 1/2 cup sugar until
light and fluffy. Beat in egg and vanilla. Gradually add
flour mixture. Stir until combined. Drop batter with a
large spoon over blueberry mixture. Try to cover the
blueberry mixture.
6. Bake at 375F for 35 – 40 minutes or until golden brown.
