Peanut Butter and Jam is great anytime of the day. These cookies are a yummy treat that satisfy your craving in just one bite. You can substitute peanut butter for soy butter or peabutter. I use NoNuts  Peabutter:


1/2 cup of butter softened

1/2 cup of agave nectar or honey

1 large egg

1 tsp. pure vanilla

1 cup natural peanut butter or soy butter or peabutter

1 1/2 cups whole wheat flour or spelt flour

1 cup old fashioned oats

1 tsp. baking soda

1/2 tsp. salt

1/2 tsp. jam for each cookie


1. Preheat oven to 350 degrees.

2. Mix agave or honey in a bowl for 1 minute.

3. Add eggs, vanilla, and peanut butter and beat on medium for another minute until smooth.

4. In a separate bowl combine all the dry ingredients and mix with the wet ingredients.

5. Drop 1 tbsp. of dough onto parchment paper and make a thumb print in the middle.

6. Add 1/2 tsp. of jam to the indentation of each cookie.

7. Bake for 10 -12 minutes and then cool on a rack.
