These oatmeal peanut butter balls are full of healthy ingredients and are a  great guilt-free, gluten-free treat. The best part is no baking required.

Makes 20-25 balls


1 cup rolled oats

2/3 cup unsweetened coconut flakes

1/2 cup natural peanut butter

1/2 cup ground flax seeds

1/2 cup chocolate chips

1/3 cup honey

1 tsp. vanilla


Stir all ingredients together in a bowl until mixed. Place in refrigerator  for a half an hour. Take out and roll mixture into small bite size balls. Place in a container and store in refrigerator. They will keep for one week if they last!
