This Panko-Crusted Salmon is my favourite new salmon recipe. I’ve made it at least a half a dozen times and it’s one of those go to recipes I can’t get enough of. It has all the right flavors and textures that even a non-salmon lover would like. Try choosing Wild or Organic Salmon which doesn’t contain pesticides or antibiotics like other fish.

Serves 4

  • 4 tsp olive oil
  • 4 pieces of salmon
  • Salt and pepper to taste
  • 2 tbsp honey mustard
  • 1 tsp chopped fresh thyme
  • 2/3 cup panko crusted bread crumbs
  • 2 tbsp chopped Italian parsley
  • 1/2 tsp sweet paprika

1 Preheat oven to 400°F. Set the salmon on baking sheet  covered in parchment paper or tinfoil with the skin side down. Sprinkle with salt and pepper.

2 In a small bowl, combine the honey mustard and 1 teaspoon of the thyme. In another small bowl, mix the panko bread crumbs with 4  teaspoons of olive oil, parsley, paprika, salt and pepper

3 Using a small spoon, spread the mustard mixture on the salmon and top with the bread crumb mixture.

4 Roast the salmon for 12-14 minutes. Serve at once.
