I love looking for healthy and delicious new recipes for my family to enjoy. I am always collecting recipes from magazines and various websites. I tried out this recipe last night, Bobby Deen’s Crispy Oven-Fried Chicken from Bobby Deen’s new cookbook, From Mama’s Table to Mine. It turned out great and was quick to put together. My husband has been grading my meals lately and this recipe gave me an 11, so it’s worth a try!

Serves 4


1/3 cup 1% buttermilk

1/4 cup finely chopped chives

1 tsp. Dijon mustard

1/4 tsp. hot sauce

4 skinless, bone-in chicken breasts

Vegetable cooking spray

1/4 tsp. salt

1/2 tsp. freshly ground black pepper

1/2 cup dry bread crumbs

2 tbsp. grated Parmesan cheese or pecorino Romano cheese


In a medium bowl whisk together buttermilk, chives, dijon mustard and hot sauce. Add skinless chicken breast to the bowl, and let it soak for at least 30 minutes or overnight.

Preheat the oven to 425 degrees. Spray a rimmed baking sheet with cooking spray.

Remove the chicken from the marinade and season it with salt and pepper. Combine the breadcrumbs and cheese in a wide, shallow bowl. Dip the chicken into the breadcrumbs mixture and toss well to coat. Place the chicken on the prepared baking sheet. Spray the baking sheet generously with cooking spray and bake for 25 to 30 minutes or until the chicken is cooked through.
